Why our wine list has no names you recognise.

Not to be difficult. Because the famous bottles were built for a different room than this one.

The honest part

You will not recognise a single label. That is on purpose.

Most wine lists are built to be reassuring. A few names everybody knows, a price ladder from safe to special, and a waiter who nods when you pick the middle one. It works. Nobody is embarrassed and nobody remembers the wine.

Ours is built the other way round. The bottles come from small growers, most of them from places you would have to look up, and none of them spend money on being famous. What they spend it on is the fruit.

The cost of that choice is real: you cannot order by recognition here. The return is that a glass can still surprise you, which is not something a bottle engineered for a supermarket shelf is allowed to do.

The room

Filomena is a Neapolitan pizzeria in Larnaca. Daniele was born in Naples in 1989 and still cooks like it, the ingredients come from Italy, and the oven is copper and runs on gas.

A pizza out of that oven is not a subtle thing. It is char, salt, tomato and smoke, arriving fast and hot. Put a careful, oaked, expensive red next to it and the pizza wins in four seconds — the wine simply disappears.

What survives that plate is wine with acidity and a bit of grip. Which, as it happens, is most of what the small growers make, and almost none of what the famous names make.

The island

Cyprus grows grapes nobody else has.

Xynisteri and Maratheftiko are not international grapes. They are Cypriot, they are grown here, and outside this island almost nobody pours them. That is not a marketing angle; it is simply where we are.

It would be easier to fill the list with the same French and Italian names every restaurant in Larnaca already has. It would also make the list interchangeable with every other list, which is a strange thing to work towards.

So the local bottles are on there next to the Italian ones, and they hold their own. If you have lived here for years and never drunk a Cypriot wine you liked, it is worth one more try.

What it does not mean

None of this requires you to know anything.

There is no test. Nobody at your table will ask what you think of the vintage, and there is no wrong answer to "what do you feel like drinking".

Say what you are eating and roughly what you like — lighter, colder, something with a bit of bite — and the glass will arrive. If it is not right, say so and we will pour something else. That is the whole system.
